He tries to emulate the Kabuli cuisine, more so than Afghani cuisine.
This sort of food is what you have when you know somebody from the Durrani or Ahmad Zai or some Shahi Kabuli families that you know or met. I mean their food is just fukking out of this world.
I had a good friend Tahir Shah Durrani and the food in his home was just extra ordinary.
Not like our hendu-pak Shadi ka khana, but pretty fukkin unique in its own way.
Afghani make very good food......even the street guys/ thugs because its just simple ingredients and low on spices. Its the same with Irani food too, although Irani food a whole notch lower than Afghani even on spices. And to be honest, I don't doubt the Iranis one bit because once you use that Saffron/ Rose water.....it is such an overwhelming flavor/ aroma......you just don't want to fukk with it. And you know the French Sharma.......3 say zyada spices ager use karay......then its a cardinal sin!
