The Jiger needs to be cooked just right Sharma. Its the most delicious thing on the coals.......
We eat it as a salan.......but Iranis/ Afghani do it on the super hot coals.
They take a grilled piece and wrap it in the naan morsel with onions, fresh Mint, Parsley, Cilantro, Chives and its just out of this world good.
He's good a good channel this Iranian Armenian guy.......
Sharma, a perfectly grilled Jiger kabab like this is better than any gosht kabab......once you start eating it, you won't back down until you get gout!
Just ask doc how good Alletti Palletti is when done right, although I'm partial to our version with Fenugreek.
