Lucknow lacks that Mirchi and spice kick, though the fragrance is divine, saffron red and white rice alag alag can see.

Kolkata, with the zabardasti ka boil ..I don't get it, but don't mind it either. Can be quite nice, actually... but makes it like a Tehri imo... and I like Tehri... veggie yellow rice with gobi 🌶 etc

I think a well made Bombay Biryani is the best. No one talks about it much, and it is not even considered a kind, but I miss it. But, as rice and meat dishes go nothing beats mutton dhansak.
