So the point about the back originates directly from Zoroastrians.

We never turn our back to the fire even while exiting the inner sanctum. We back away, walking backward.

And the water is sprinkled over the place on which a special person stands (birthday for example) when doing sagan n tili and choka (rice grains) and flowers. After the ceremony ois over, and the person steps away, water is sprinkled over that spot (which has the chalk in ornamental Persian patterns ... like fish, swastika, etc).
