The real deal is how these D' Souza's and Dexters and Nigel's and Jacklynn Jacklynn type Goan's have learned to cure deli meats!nice, skimmed through.. those looked deelish.

Karachi main aesa kuchh nahi hae cuz only pork gets cured and beef (Katta/ Bhensa) not suitable and neither is Lamb or any other meat.

We have no clue bhai. Irani's cure their lamb like jerky up north (salted n hung) and the Armenian cure the suar and its an art, learned over millennia. Forget curing bhai, hum to smoke bhee nahi kartay. Just clueless.
AL-Turkiyan guppu have a product called AL-Bastruma (Pastrami) its cured lamb and its horribly over spiced.
